Ingredients

  • 3 large (white and light green parts only) leeks
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 minced garlic cloves
  • 0.5 cups heavy cream
  • 0.75 cups grated Parmesan cheese
  • 8 sheets phyllo pastry sheets
  • 4 tablespoons melted unsalted butter
  • 1 teaspoon fresh thyme leaves (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish or line it with parchment paper.

Step 2

Slice the leeks lengthwise, rinse thoroughly to remove dirt, then thinly slice them crosswise.

Step 3

In a large skillet, heat 2 tablespoons of unsalted butter and 2 tablespoons of olive oil over medium heat. Add the sliced leeks, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Cook, stirring occasionally, for 6-8 minutes, until the leeks are soft.

Step 4

Add the minced garlic to the skillet and cook for 1 minute until aromatic. Stir in 0.5 cups of heavy cream and cook for 2-3 more minutes until slightly thickened. Remove from heat and stir in 0.5 cups of the grated Parmesan cheese and thyme, if using.

Unroll the phyllo pastry sheets and cover them with a barely damp kitchen towel to prevent drying out. Place one sheet into the prepared baking dish and brush it with melted butter using a pastry brush. Repeat this step with 7 more sheets, layering and brushing butter between each layer.

Remove from the oven and allow to cool slightly. Slice into squares or rectangles and serve warm as an appetizer, side dish, or light main.
