Ingredients

  • 1 medium russet potato (peeled and diced)
  • 1 teaspoon dried thyme
  • 1 whole bay leaf
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Melt the butter in a large pot over medium heat.

Step 2

Add the sliced leeks, chopped onion, and minced garlic to the pot. Cook for 5–7 minutes, stirring often, until the vegetables are softened but not browned.

Step 3

Stir in the diced potato, thyme, and bay leaf. Cook for an additional 2 minutes to release the aroma of the spices.

Step 4

Pour in the chicken or vegetable stock. Bring the mixture to a boil, then reduce the heat to low and simmer for 20–25 minutes, or until the potatoes are very tender.
