Ingredients

  • 2 whole (large) leeks
  • 2 tablespoons olive oil
  • 8 ounces cream cheese
  • 1 cup sour cream
  • 0.25 cup mayonnaise
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 2 tablespoons (finely chopped) chives
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Trim the dark green tops and root ends off the leeks, leaving only the white and light green parts.

Step 2

Slice the leeks lengthwise and rinse under cold water, separating the layers to remove any trapped dirt. Pat the leeks dry and chop them finely.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Once the oil is warm, add the chopped leeks and a pinch of salt. Cook the leeks for 8–10 minutes, stirring occasionally, until they are softened and lightly golden. Remove from heat and set aside to cool slightly.

Step 5

In a mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.

Step 6

Mince or finely grate the garlic cloves and add them to the bowl along with the lemon juice, salt, and black pepper. Stir until well combined.

Step 7

Fold the cooked leeks into the mixture, ensuring they are evenly distributed.

Step 8

Transfer the dip to a serving bowl and garnish with chopped chives.

Step 9

Serve immediately with chips, crackers, or fresh vegetables, or refrigerate for 1–2 hours to let the flavors meld together before serving.
