Ingredients

  • 3 whole leeks
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 whole garlic cloves, minced
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 package frozen puff pastry sheets
  • 1 whole egg, beaten (for egg wash)
  • 1 tablespoon all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim and clean the leeks, slicing them lengthwise and then into thin half-moons. Rinse thoroughly to remove any grit.

Step 3

In a large skillet, melt the butter with the olive oil over medium heat. Add the leeks and sauté until they are soft and slightly caramelized, about 8–10 minutes.

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Stir in the heavy cream and grated Parmesan cheese, and cook for another 2–3 minutes until the mixture thickens slightly. Add the fresh thyme, salt, and black pepper. Mix well, then remove from heat and let the filling cool slightly.
