Ingredients

  • 4 medium cucumbers
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 2 cloves garlic
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon sesame seeds
  • 2 stalks scallions

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry. Cut off the ends of the cucumbers, then slice them in half lengthwise.

Step 2

Using the flat side of a knife or a rolling pin, gently smash the cucumber halves until they slightly break apart and split into jagged pieces. Once smashed, cut them into bite-sized chunks.

Step 3

Place the cucumber pieces in a colander and sprinkle the salt evenly over them. Toss to combine and let them sit for 10 minutes to draw out excess moisture.

Step 4

Meanwhile, in a small mixing bowl, prepare the dressing by combining rice vinegar, soy sauce, sesame oil, honey, minced garlic, and red chili flakes. Stir well until the honey is fully dissolved.

Step 5

Thinly slice the scallions and set them aside for garnish.

Step 6

After 10 minutes, pat the cucumbers dry with a paper towel to remove the moisture and excess salt. Transfer the cucumbers to a large mixing bowl.

Step 7

Pour the dressing over the cucumbers and toss to coat evenly. Let the cucumbers marinate for at least 5 minutes to soak up the flavors.

Step 8

Transfer the salad to a serving plate. Sprinkle the sesame seeds and sliced scallions on top as a garnish.

Step 9

Serve immediately or chill in the refrigerator for 15 minutes before serving for an even more refreshing taste.
