Ingredients

  • 300 g Penne pasta
  • 250 g Cherry tomatoes
  • 1 medium Cucumber
  • 1 large Bell pepper
  • 0.5 medium Red onion
  • 100 g Black olives, pitted and sliced
  • 100 g Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped
  • 4 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 clove Garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the pasta cooks, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and chop the bell pepper into small bite-sized pieces. Thinly slice the red onion.

Step 3

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and crumbled feta cheese.

Step 4

Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, dried oregano, salt, and black pepper until well emulsified.
