Ingredients

  • 6 cups Fresh spinach
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 6 Eggs
  • 1 cup Milk (whole or 2%)
  • 1 cup Cheddar cheese, shredded
  • 1 quarter cup Parmesan cheese, grated
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish or line it with parchment paper.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Add the fresh spinach to the skillet and cook while stirring until wilted, about 3-4 minutes. Set aside to cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, milk, and all-purpose flour until smooth. Stir in the baking powder, salt, black pepper, and nutmeg (if using).

Step 5

Fold in the shredded cheddar cheese, grated Parmesan cheese, and the cooked spinach mixture into the egg mixture. Mix until well combined.

Step 6

Pour the mixture into the prepared baking dish and spread evenly.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set. To check doneness, insert a toothpick in the center; it should come out clean.

Step 8

Allow the quiche to cool in the pan for about 10 minutes before slicing it into 9 equal squares.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
