Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 4 minced garlic cloves
  • 1 pound, cubed beef stew meat
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon, or to taste salt
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef or chicken broth
  • 2 cups, cooked or 1 can (15 ounces), drained and rinsed red kidney beans
  • 1 piece bay leaf
  • 2 tablespoons, chopped (for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the diced onion and cook until soft and translucent, about 5–7 minutes.

Step 3

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the cubed beef and brown on all sides, about 5–7 minutes.

Step 5

Sprinkle the cinnamon, allspice, black pepper, and salt over the beef. Stir to coat the meat evenly.

Step 6

Mix in the tomato paste, cooking for 1 minute to develop its flavor.

Step 7

Add the diced tomatoes, broth, and bay leaf. Stir to combine.

Step 8

Bring the mixture to a gentle boil, then lower the heat to a simmer. Cover the pot and cook for 45 minutes, or until the beef is tender.

Step 9

Add the cooked kidney beans to the pot and simmer uncovered for 20–30 minutes to thicken the sauce.

Step 10

Adjust seasoning with more salt and pepper, if needed. Remove the bay leaf before serving.

Step 11

Garnish with freshly chopped parsley and serve hot with a side of vermicelli rice or warm pita bread.
