Ingredients

  • 800 grams Potatoes
  • 4 tablespoons Lemon juice
  • 3 tablespoons Extra virgin olive oil
  • 2 units Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh mint leaves
  • 2 stalks Green onions

Directions

Step 1

Rinse and peel the potatoes, then cut them into bite-sized cubes of approximately 2 cm.

Step 2

Place the potato cubes in a large pot of salted water and bring to a boil over medium-high heat. Cook for 15-20 minutes, or until the potatoes are fork-tender but not falling apart.

Step 3

While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper until well combined. Set the dressing aside.

Step 4

Chop the parsley and mint leaves finely. Slice the green onions thinly, including the green parts. Set aside.

Once the potatoes are cooked, drain them and let them cool slightly for about 5 minutes.

Transfer the warm potatoes to a serving bowl. Pour the dressing over the potatoes and gently toss to coat each piece evenly.

Add the chopped parsley, mint, and green onions to the bowl. Mix gently to avoid breaking the potatoes.
