Ingredients

  • 500 grams All-purpose flour
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 250 milliliters Warm milk
  • 60 milliliters Olive oil
  • 400 grams Ground beef or lamb
  • 1 medium Onion, finely chopped
  • 1 medium Tomato, finely diced
  • 20 grams Parsley, finely chopped
  • 2 tablespoons Plain yogurt
  • 1 tablespoon Pomegranate molasses
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt (for filling)
  • 1 tablespoon Lemon juice

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.

Step 2

Gradually add the warm milk and olive oil. Mix until the dough comes together.

Step 3

Knead the dough on a lightly floured surface for about 8-10 minutes until it is smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1 hour or until it doubles in size.

Step 5

While the dough is rising, prepare the filling. In a skillet, cook the ground beef or lamb over medium heat until browned.

Step 6

Add the chopped onion and sauté for 2-3 minutes until softened.

Step 7

Stir in the diced tomato, parsley, yogurt, pomegranate molasses, ground allspice, cinnamon, black pepper, and salt. Cook the mixture for another 5-7 minutes until the filling is well combined and slightly thickened.

Step 8

Remove the filling from heat and stir in the lemon juice. Let it cool to room temperature.

Step 9

Preheat the oven to 200°C (400°F) and line two baking trays with parchment paper.

Step 10

Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a ball.

Step 11

On a floured surface, roll each dough ball into a 5-6 inch circle.

Step 12

Place about 2 tablespoons of the filling in the center of each circle. Fold the edges of the dough over the filling to form a triangle or square shape, pinching the seams to seal.

Step 13

Place the shaped pies on the prepared baking trays, leaving a little space between them.

Step 14

Bake in the preheated oven for 15-20 minutes or until the pies are golden brown and cooked through.

Step 15

Let the sfeeha cool slightly before serving. Serve warm with a side of yogurt or a fresh salad.
