Ingredients

  • 1 cup Brown or green lentils
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 cup Cucumber (chopped)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Red onion (finely diced)
  • 0.5 cup Fresh parsley (chopped)
  • 0.25 cup Fresh mint (chopped)
  • 3 tablespoons Extra-virgin olive oil
  • 3 tablespoons Fresh lemon juice
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Ground black pepper
  • 1 clove Garlic (minced)

Directions

Step 1

Rinse the lentils under cold water and pick out any debris or stones.

Step 2

In a medium pot, combine the lentils, water, and 1 teaspoon of salt. Bring to a boil over medium-high heat.

Reduce the heat to low, cover the pot, and let the lentils simmer for 20-25 minutes, or until they are tender but not mushy.
