Ingredients

  • 1 cup brown or green lentils
  • 6 cups water
  • 1 bunch Swiss chard
  • 1 medium, diced onion
  • 3 cloves, minced garlic
  • 3 tablespoons olive oil
  • 2 medium, peeled and diced potatoes
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper

Directions

Step 1

Rinse the lentils thoroughly under cold running water and set aside.

Step 2

In a large pot, add the rinsed lentils and 6 cups of water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20 minutes, partially covered.

Step 3

While the lentils are cooking, wash the Swiss chard thoroughly. Separate the stems and leaves. Chop the stems into small pieces and roughly chop the leaves. Set aside.

In a skillet, heat the olive oil over medium heat. Sauté the diced onion until soft and translucent, about 5 minutes.

Add the minced garlic to the onion and sauté for another 1-2 minutes, until fragrant. Stir in the cumin and cook for 30 seconds.
