Ingredients

  • 1 lb Lean ground turkey
  • 4 cups Cauliflower florets
  • 1 tbsp Olive oil
  • 1 medium Yellow onion, finely diced
  • 2 medium Carrots, peeled and diced
  • 2 Celery stalks, diced
  • 1 cup Frozen peas
  • 1 cup Low-sodium chicken broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 Garlic cloves, minced
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.25 cup Milk (unsweetened almond or skim)
  • 0.25 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of water to a boil. Add the cauliflower florets and cook for 8-10 minutes, or until fork-tender. Drain and set aside.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened.

Add the minced garlic to the skillet and cook for an additional 1 minute.

Add the ground turkey to the skillet and cook until no longer pink, breaking it up with a wooden spoon, about 6-8 minutes.

Stir in the tomato paste, Worcestershire sauce, chicken broth, salt, and pepper. Mix until well combined. Allow the mixture to simmer for 5 minutes, then stir in the frozen peas. Remove from heat.
