Ingredients

  • 14.5 oz canned diced tomatoes
  • 2 medium fresh Roma tomatoes
  • 0.5 medium red onion
  • 1 medium jalapeño
  • 2 large garlic cloves
  • 0.5 cup fresh cilantro
  • 2 tablespoons lime juice
  • 0.5 teaspoons ground cumin
  • 1 teaspoons kosher salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

Drain most of the liquid from the canned diced tomatoes to prevent the salsa from becoming too watery. Add the drained tomatoes to the food processor.

Step 2

Chop the fresh Roma tomatoes into quarters and add them to the food processor.

Step 3

Peel and roughly chop half of a red onion. Add it to the food processor.

Step 4

Cut the stem off the jalapeño and remove the seeds if you prefer a milder salsa. Chop into larger chunks and add it to the mix.

Step 5

Peel the garlic cloves and add them to the food processor.

Step 6

Add the fresh cilantro, lime juice, ground cumin, kosher salt, and ground black pepper to the food processor.

Step 7

Pulse the food processor in short bursts until the salsa reaches your desired consistency. For a chunkier salsa, pulse fewer times; for a smoother salsa, pulse more often.

Step 8

Taste the salsa and adjust the seasoning by adding more salt, pepper, or lime juice as needed.

Step 9

Transfer the salsa to a serving bowl or storage container. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld, but it can also be served immediately if desired.

Step 10

Serve with tortilla chips, tacos, or use it as a topping for grilled meats, eggs, or salads. Enjoy!
