  • 3 tbsp Fish sauce
  • 3 tbsp Lime juice
  • 1 tbsp Palm sugar or brown sugar
  • 2 Fresh red chilies, thinly sliced
  • 2 tbsp Fresh cilantro, chopped (for garnish)
  • 2 Spring onions, thinly sliced (for garnish)

Directions

Step 1

In a large saucepan, combine coconut milk and chicken stock and bring to a gentle simmer over medium heat.

Step 2

Add the bruised lemongrass, sliced galangal, and torn kaffir lime leaves to the pot. Simmer for 5 minutes to allow the flavors to infuse.

Add the sliced chicken breast to the pot and cook for 8-10 minutes, or until the chicken is cooked through.
