Ingredients

  • 400 grams asparagus, fresh or frozen
  • 1 onion, chopped (or 1/2 teaspoon onion powder)
  • 2 garlic cloves (or 1/2 teaspoon garlic powder)
  • 750 milliliters vegetable broth (or chicken broth)
  • 120 milliliters milk (or plant-based milk like almond or oat)
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 0 croutons or bread (optional, for topping)

Directions

Step 1

If using fresh asparagus, trim the woody ends and chop into 2-inch pieces. If using frozen asparagus, thaw it slightly.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. If using onion powder, skip this step and add it directly later.

Step 3

Add minced garlic or garlic powder and sauté for 30 seconds until fragrant.

Step 4

Add the asparagus and vegetable broth to the pot. Stir well, and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 12-15 minutes, until the asparagus is tender.

Step 5

Carefully transfer the soup to a blender or use an immersion blender to puree it until smooth. If using a blender, work in batches if needed, and be cautious with hot liquids.

Step 6

Return the smooth soup to the pot (if blended in a blender). Add the milk, salt, and black pepper, and stir to combine.

Step 7

Heat the soup gently over low heat, but do not boil. Adjust seasoning to taste and add the lemon juice for a bright touch.

Step 8

Serve hot, optionally topped with croutons or a slice of crusty bread on the side.
