Ingredients

  • 500 grams All-purpose flour
  • 7 grams Instant yeast
  • 10 grams Salt
  • 400 milliliters Lukewarm water
  • 60 milliliters Olive oil
  • 2 tablespoons Fresh rosemary (optional)
  • 1 tablespoon Flaky sea salt

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, and salt. Mix well to distribute the ingredients evenly.

Step 2

Pour the lukewarm water into the dry ingredients and stir using a wooden spoon or spatula until a sticky dough forms. Do not knead the dough.

Step 3

Cover the bowl with plastic wrap or a clean kitchen towel and let the dough rise at room temperature for 2-3 hours, or until it has doubled in size and looks bubbly.

Step 4

Once the dough has risen, generously grease a 9x13-inch (23x33 cm) baking pan with half of the olive oil (about 30 milliliters).

Step 5

Transfer the dough to the prepared pan, using your hands to gently spread it out into an even layer. If it resists, let it rest for 10 minutes and then try again.

Step 6

Drizzle the remaining olive oil over the top of the dough. Use your fingers to dimple the surface of the dough, pressing down lightly to create small indentations.

Step 7

Sprinkle fresh rosemary and flaky sea salt over the dough, if desired. This step is optional, but it adds great flavor and texture.

Step 8

Preheat your oven to 220°C (425°F). While the oven preheats, let the dough rest in the pan for another 15-20 minutes to puff up slightly.

Step 9

Bake the focaccia in the preheated oven for 20-25 minutes, or until the top is golden brown and crisp.

Step 10

Remove the focaccia from the oven and allow it to cool in the pan for 5-10 minutes before transferring it to a wire rack.

Step 11

Slice into squares or rectangles and serve warm or at room temperature. Enjoy this deliciously simple bread as is, or pair it with olive oil, balsamic vinegar, or your favorite dip.
