Ingredients

  • 1 lb ground beef
  • 1 medium, diced onion
  • 2 minced garlic cloves
  • 1 medium, chopped cabbage
  • 1 cup, uncooked white rice
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup beef broth
  • 1 tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded mozzarella cheese (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium-high heat, brown the ground beef with the diced onion until the beef is fully cooked and the onion is softened, about 5-7 minutes. Add the minced garlic and cook for 1 more minute. Drain any excess grease.

Step 3

While the beef is cooking, chop the cabbage into bite-sized pieces and set aside.

Step 4

In a large mixing bowl, combine the cooked ground beef mixture, chopped cabbage, uncooked rice, diced tomatoes (with juice), tomato sauce, beef broth, brown sugar, paprika, salt, and black pepper. Stir to combine thoroughly.

Step 5

Lightly grease a 9x13 inch baking dish with cooking spray or oil. Pour the mixture into the prepared dish and spread it out evenly.

Step 6

Cover the casserole dish tightly with aluminum foil to prevent the rice from drying out during baking.

Step 7

Bake in the preheated oven for 50 minutes. After 50 minutes, check that the rice is fully cooked. If not, add a splash of broth or water, re-cover, and bake for an additional 10 minutes.

Step 8

If using shredded mozzarella cheese, sprinkle the cheese evenly over the top of the casserole. Return to the oven, uncovered, for 5-10 minutes, until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it sit for 5 minutes before serving. Garnish with fresh parsley, if desired.
