Ingredients

  • 1 pound beef stew meat
  • 1 pound baby potatoes
  • 2 cups baby carrots
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper.

Step 3

Add the beef to the pot and sear on all sides until browned, about 5-7 minutes. Remove the beef and set it aside.

Step 4

Dice the onion and mince the garlic cloves.

Step 5

In the same pot, add the diced onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Stir in the tomato paste, cooking for 2 minutes to deepen the flavor.

Step 7

Pour in the beef broth and Worcestershire sauce. Stir to combine and scrape up any browned bits from the bottom of the pot.

Step 8

Add the seared beef, baby potatoes, baby carrots, dried thyme, and bay leaf to the pot.

Step 9

Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 2.5-3 hours, stirring occasionally.

Step 10

Taste and adjust seasoning with additional salt and pepper if needed.

Step 11

Remove the bay leaf before serving. Serve hot with crusty bread or over rice, if desired.
