Ingredients

  • 2 pounds Pork shoulder (boneless)
  • 2 cups Barbecue sauce
  • 1 cup Chicken broth
  • 1 large Onion
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 6 pieces Burger buns
  • 2 cups Coleslaw (optional, for topping)

Directions

Step 1

Peel and thinly slice the onion, then place the slices in the bottom of a slow cooker.

Step 2

Trim excess fat from the pork shoulder and place it over the onion slices in the slow cooker.

Step 3

In a small bowl, mix garlic powder, paprika, salt, and black pepper. Sprinkle the seasoning evenly over the pork.

Step 4

Pour the chicken broth around the pork in the slow cooker, ensuring not to wash off the seasoning.

Step 5

Cover the slow cooker with its lid and cook on low for 6-8 hours or until the pork is tender enough to shred easily with a fork.

Step 6

Once cooked, transfer the pork to a large plate or cutting board. Use two forks to shred the pork into bite-sized pieces, discarding any large pieces of fat.

Step 7

Discard the cooking liquid and onions from the slow cooker. Return the shredded pork to the slow cooker and stir in the barbecue sauce until the pork is evenly coated.

Step 8

Cover the slow cooker and cook on low for an additional 30 minutes to let the flavors meld together.

Step 9

Toast the burger buns lightly (optional) and spoon a generous amount of the barbecue pork onto each bun bottom.

Step 10

Top with coleslaw (if desired) and place the top bun over the filling. Serve warm and enjoy!
