Ingredients

  • 200 grams Spaghetti or pasta of choice
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 150 grams Button mushrooms, sliced
  • 50 grams Parmesan cheese or vegetarian hard cheese, grated
  • 100 milliliters Heavy cream
  • 0.5 teaspoons Cracked black pepper
  • 0.25 teaspoons Salt
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

Step 2

2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

3. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 4

4. Add the sliced mushrooms to the skillet, and cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and slightly golden.

Step 5

5. Reduce the heat to low. Stir in the heavy cream, grated Parmesan cheese, salt, and cracked black pepper. Mix until the cheese melts, creating a smooth, creamy sauce.

Step 6

6. Add the cooked pasta to the skillet and toss to coat evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.

Step 7

7. Taste and adjust seasoning with additional salt or pepper, if necessary.

Step 8

8. Divide the pasta into bowls, garnish with chopped parsley (if using), and serve immediately.
