Ingredients

  • 1 pound chicken breast
  • 0.5 cup cornstarch
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 0.5 cup ketchup
  • 0.25 cup rice vinegar
  • 2 tablespoons soy sauce
  • 0.25 cup brown sugar
  • 1 cup pineapple chunks (drained)
  • 1 medium green bell pepper (chopped)
  • 2 cups white rice (cooked, for serving)

Directions

Step 1

Cut the chicken breast into bite-sized pieces.

Step 2

In a bowl, coat the chicken pieces with cornstarch, shaking off any excess.

Step 3

In a separate shallow bowl, beat the eggs. Dip the cornstarch-coated chicken pieces into the egg mixture.

Step 4

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 5

Add the chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until lightly browned and cooked through. Remove the chicken and set aside.

Step 6

In the same skillet, mix ketchup, rice vinegar, soy sauce, and brown sugar. Stir well and let the sauce simmer for 3 minutes.

Step 7

Add the pineapple chunks and chopped green bell pepper to the sauce. Let cook for 2-3 minutes until slightly softened.

Step 8

Return the chicken to the skillet, stirring to coat it evenly in the sauce. Simmer everything together for an additional 3-5 minutes.

Step 9

Serve the sweet and sour chicken over cooked white rice. Enjoy!
