Ingredients

  • 3 pounds Beef chuck roast
  • 2 medium Yellow onions
  • 4 medium Carrots
  • 1.5 pounds Baby potatoes
  • 2 cups Beef broth
  • 3 tablespoons Worcestershire sauce
  • 3 cloves Garlic
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Sear the roast for about 3-4 minutes on each side until well-browned. Remove from heat and set aside.

Peel and roughly chop the yellow onions into wedges. Peel the carrots and slice them into 2-inch pieces. Leave the baby potatoes whole if small, or halve them if larger.

In a 6-quart slow cooker, layer the onions, carrots, and baby potatoes at the bottom.

Place the seared beef chuck roast on top of the vegetables.
