  • 500 grams Beef (stew meat, diced)
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (minced)
  • 2 tablespoons Vindaloo spice mix
  • 200 milliliters Tomato puree
  • 200 milliliters Coconut milk
  • 2 tablespoons White vinegar
  • 2 tablespoons Vegetable oil
  • 100 milliliters Water
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Heat the vegetable oil in a large skillet or pot over medium heat.

Step 2

Add the chopped onion and sauté until golden brown, about 5 minutes.

Step 3

Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Add the vindaloo spice mix, stirring well to coat the onion mixture.
