Ingredients

  • 2 pieces ripe bananas
  • 1 pieces egg
  • 50 grams granulated sugar
  • 50 milliliters vegetable oil
  • 100 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt
  • 50 grams optional chocolate chips

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a muffin tin with six muffin liners.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Step 3

Add the egg, granulated sugar, vegetable oil, and vanilla extract to the mashed bananas. Whisk until well combined.

Step 4

Sift the all-purpose flour and baking powder into the wet ingredients. Add the pinch of salt and gently fold the mixture together until no dry streaks remain. Be careful not to overmix.

Step 5

If desired, fold in the optional chocolate chips for extra sweetness.

Step 6

Divide the batter evenly among the six muffin liners, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your lazy banana muffins warm or at room temperature!
