Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 cups frozen mixed vegetables
  • 1 cup white rice
  • 2 cups water

Directions

Step 1

Heat a large skillet or frying pan over medium heat and add the olive oil.

Step 2

While the pan is warming up, season the chicken thighs on both sides with garlic powder, onion powder, paprika, dried oregano, salt, and black pepper.

Step 3

Place the seasoned chicken thighs into the pan. Sear them for 3-4 minutes on each side, or until they are golden brown. Remove them from the pan and set aside.

Step 4

In the same pan, add the frozen mixed vegetables and sauté them for 2-3 minutes until they are slightly softened.

Step 5

Stir in the white rice, ensuring it is evenly coated with the remaining oil and any spices left in the pan.

Step 6

Pour in the water and lemon juice, then give the mixture a good stir.

Step 7

Nestle the seared chicken thighs back into the pan on top of the rice and vegetable mixture.

Step 8

Cover the pan with a lid, reduce the heat to low, and let everything simmer for 20 minutes, or until the rice is cooked and the chicken is fully cooked through (internal temperature of 165°F or 74°C).

Step 9

Turn off the heat and let it rest covered for 5 minutes.

Step 10

Fluff the rice with a fork, serve, and enjoy your Lazy Bachelor’s Chicken!
