Ingredients

  • 2 medium Zucchini
  • 1 large Eggplant
  • 3 medium Potatoes
  • 2 cups Tomato sauce
  • 1 large Onion
  • 3 cloves Garlic
  • 3 tablespoons Olive oil
  • 1 cup Mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 2 tablespoons Fresh basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and thinly slice the zucchini, eggplant, and potatoes (about 1/4-inch thick).

Step 3

Finely chop the onion and mince the garlic.

Step 4

In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened.

Stir in the tomato sauce, salt, black pepper, dried oregano, and basil. Let the sauce simmer for 5 minutes, then remove from heat.

Grease a 9x13-inch baking dish with the remaining 1 tablespoon of olive oil.

Spread a thin layer of the tomato sauce on the bottom of the baking dish.
