Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium (chopped) onion
  • 2 cloves (minced) garlic
  • 1 packet taco seasoning
  • 14.5 oz can diced tomatoes with green chilies
  • 1 15-oz can (drained and rinsed) black beans
  • 1 cup frozen corn
  • 6 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 0.5 cup sour cream
  • 0.25 cup sliced black olives
  • 0.25 cup chopped cilantro

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened (about 2-3 minutes).

Step 3

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks.

Step 4

Stir in the taco seasoning, diced tomatoes with green chilies (including their liquid), black beans, and frozen corn. Reduce heat to low and simmer for 5 minutes.

Step 5

Spray a 9-inch pie dish or cake pan with non-stick cooking spray.

Step 6

Place one flour tortilla at the bottom of the dish. Spread a thin layer of the meat mixture over the tortilla, followed by a sprinkle of shredded cheese.

Step 7

Repeat the layers with the remaining tortillas, meat mixture, and cheese, ending with a layer of cheese on top.

Step 8

Cover the dish loosely with aluminum foil and bake in the preheated oven for 20 minutes.

Step 9

Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Step 10

Let the tortilla pie cool for 5 minutes before slicing into wedges.

Step 11

Top each serving with a dollop of sour cream, a sprinkle of black olives, and chopped cilantro. Serve warm and enjoy!
