  • 16 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese

  • 3 cloves garlic

  • 1 cup breadcrumbs
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a thin layer of olive oil.

Step 2

Wash the spinach thoroughly and blanch in boiling water for 1-2 minutes until it wilts. Drain well and press out excess water using paper towels.

Step 3

In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, eggs, minced garlic, salt, black pepper, and nutmeg. Mix until smooth and well combined.
