  • 1 cup pumpkin puree
  • 0.75 cups granulated sugar
  • 0.5 cups brown sugar, packed
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 0.25 cups granulated sugar (for cream cheese layer)
  • 1 large egg (for cream cheese layer)
  • 1 tablespoon all-purpose flour (for cream cheese layer)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger. Set aside.

In another large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and well-combined.
