Ingredients

  • 226 grams unsalted butter
  • 300 grams granulated sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 65 grams unsweetened cocoa powder
  • 120 grams all-purpose flour
  • 0.5 teaspoon salt
  • 240 grams powdered sugar (for mint layer)
  • 113 grams softened unsalted butter (for mint layer)
  • 2 tablespoons heavy cream (for mint layer)
  • 1 teaspoon peppermint extract
  • 3 drops green food coloring
  • 170 grams semi-sweet chocolate chips (for glaze)
  • 28 grams unsalted butter (for glaze)

Directions

Step 1

Preheat the oven to 175°C (350°F) and line a 9x9-inch baking pan with parchment paper for easy removal.

Step 2

In a medium saucepan, melt 226 grams of butter over low heat. Remove from heat and stir in the granulated sugar until fully dissolved.

Step 3

Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in 2 teaspoons of vanilla extract.

Step 4

Sift the cocoa powder, flour, and salt into the butter mixture and gently fold until just combined. Do not overmix.

Step 5

Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick comes out with a few moist crumbs. Let the brownies cool completely in the pan.

Step 6

While the brownies are cooling, make the mint frosting. In a medium bowl, beat 113 grams of softened butter until creamy. Gradually add the powdered sugar and beat until smooth.

Step 7

Mix in the heavy cream, peppermint extract, and food coloring until combined and smooth. Spread the mint frosting evenly over the cooled brownies and chill for 15 minutes in the refrigerator.

Step 8

Prepare the chocolate glaze by melting 170 grams of chocolate chips and 28 grams of butter together in a microwave-safe bowl in 20-second intervals, stirring after each interval, until smooth.

Step 9

Pour the melted chocolate glaze over the chilled mint layer and spread evenly. Refrigerate for at least 1 hour to set.

Step 10

Cut into 16 squares using a warm knife for clean edges. Serve and enjoy your Layered Mint Chocolate Brownies!
