Line a 9x5-inch loaf pan with plastic wrap, leaving overhang on all sides for easy removal later.
Allow the vanilla ice cream to sit at room temperature for 5–10 minutes until softened but not melted. Spread the softened vanilla ice cream evenly into the bottom of the loaf pan to create the first layer. Smooth the surface with a spatula.
Sprinkle half of the crushed chocolate sandwich cookies evenly over the vanilla ice cream layer. Gently press them into the surface with the back of a spoon.
Place the loaf pan in the freezer for 15 minutes to firm up the first layer.
Remove the chocolate ice cream from the freezer and let it soften for 5–10 minutes. Spread the chocolate ice cream evenly on top of the cookie layer to create the second layer. Smooth the surface with a spatula.
Sprinkle the chopped nuts over the chocolate ice cream layer (if using). Gently press them down to adhere. Return the loaf pan to the freezer for another 15 minutes.
Finally, soften the strawberry ice cream for 5–10 minutes. Spread it evenly on top to create the third and final layer. Smooth the surface with a spatula and fold the overhanging plastic wrap over the terrine to cover it completely.
Freeze the terrine for at least 4 hours, or until fully set.
When ready to serve, unwrap the plastic wrap from the top. Invert the loaf pan onto a serving platter and carefully remove the plastic wrap.
