  • 2 cups frozen corn kernels, thawed
  • 15 ounces black beans, drained and rinsed
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole lime, cut into wedges for serving

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Add the diced chorizo and cook until browned and slightly crispy, about 5 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.
