  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 medium Russet potatoes, peeled and cubed
  • 0.5 cup milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Peel and cube the potatoes, then place them in a large pot of salted water. Bring to a boil and cook for about 15 minutes, or until tender.

While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking for 2-3 minutes until softened.
