Ingredients

  • 170 grams Unsalted butter
  • 200 grams Granulated sugar
  • 100 grams Light brown sugar
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 120 grams All-purpose flour
  • 50 grams Unsweetened cocoa powder
  • 0.5 teaspoons Salt
  • 250 grams Cream cheese
  • 150 grams Powdered sugar
  • 2 tablespoons Heavy cream
  • 200 grams Semisweet chocolate chips
  • 120 milliliters Heavy cream (for ganache)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9-inch baking pan with parchment paper, letting the edges hang over for easy removal.

Step 2

In a medium saucepan, melt the butter over low heat, then remove from heat and whisk in granulated sugar, light brown sugar, and vanilla extract until smooth.

Step 3

Whisk in the eggs, one at a time, until fully incorporated. Set aside.

Step 4

In a separate mixing bowl, sift together the all-purpose flour, cocoa powder, and salt. Gradually fold this dry mixture into the wet ingredients until combined and smooth.

Step 5

Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and let cool completely.

Step 6

While the brownies are cooling, make the vanilla cream layer: Beat the cream cheese in a medium bowl until smooth and fluffy. Add powdered sugar and 2 tablespoons of heavy cream, then beat until light and creamy.

Step 7

Spread the cream cheese mixture evenly over the cooled brownie base. Place in the refrigerator for 15-20 minutes to set slightly.

Step 8

To make the ganache, heat 120 milliliters of heavy cream in a small saucepan over low heat until just simmering. Remove from heat and pour over the semisweet chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until glossy and smooth.

Step 9

Pour the ganache over the chilled cream cheese layer, spreading evenly with an offset spatula. Refrigerate the layered brownies for at least 1 hour to set.

Step 10

When ready to serve, lift the brownies out of the pan using the parchment paper edges. Slice into 12 squares and enjoy your rich, layered treat!
