Ingredients

  • 1 lb ground beef
  • 1 medium, finely chopped onion
  • 2 minced garlic cloves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 4 medium, peeled and cubed Russet potatoes
  • 4 tbsp unsalted butter
  • 0.5 cup milk
  • 1.5 cups, shredded cheddar cheese
  • 1 tsp dried parsley
  • 0.5 cup beef broth

Directions

Step 1

Peel and cube the potatoes, then place them in a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until tender.

Step 2

While the potatoes are cooking, heat a skillet over medium heat. Add the ground beef, chopped onion, and minced garlic, breaking the beef apart with a spatula. Cook until the beef is browned and fully cooked, about 5-7 minutes. Drain excess grease if necessary.

Step 3

Season the beef mixture with salt, black pepper, and paprika. Pour in beef broth and stir to combine. Simmer for 2-3 minutes, then remove from heat.

Step 4

Once the potatoes are cooked, drain them and return them to the pot. Add unsalted butter and milk, then mash until smooth and creamy. Season with additional salt to taste if needed.

Step 5

Spray the inside of the crock pot with non-stick cooking spray.

Step 6

Layer the seasoned ground beef mixture evenly across the bottom of the crock pot.

Step 7

Spread the mashed potatoes over the beef layer, smoothing the surface with a spatula.

Step 8

Sprinkle shredded cheddar cheese over the mashed potatoes.

Step 9

Cover the crock pot with a lid and set it to cook on low for 4 hours or until heated through and the cheese is melted and bubbly.

Step 10

Sprinkle dried parsley over the top for garnish before serving.
