Ingredients

  • 1 pound Ground beef
  • 1 medium Onion, finely chopped
  • 1 packet Taco seasoning
  • 0.5 cup Water
  • 1.5 cups Sour cream
  • 1 can (10.5 oz) Cream of mushroom soup
  • 2 cups Shredded cheddar cheese
  • 8 Flour tortillas
  • 4 oz Canned diced green chilies (optional)
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spray a 9x13-inch baking dish with cooking spray and set aside.

Step 3

In a large skillet, cook the ground beef and finely chopped onion over medium heat until the beef is browned and cooked through. Drain any excess fat.

Step 4

Add the taco seasoning and water to the skillet with the beef and stir to combine. Simmer for 5 minutes or until the mixture thickens slightly. Remove from heat.

Step 5

In a medium mixing bowl, combine the sour cream and cream of mushroom soup. Mix well until smooth. If using diced green chilies, stir them in at this point.

Step 6

Spread a thin layer of the sour cream mixture across the bottom of the prepared baking dish.

Step 7

Place two tortillas over the sour cream mixture, overlapping as necessary.

Step 8

Layer one-third of the beef mixture over the tortillas, followed by one-third of the remaining sour cream mixture and one-third of the shredded cheddar cheese.

Step 9

Repeat the layering process twice more, ending with a layer of cheese on top.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 11

Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbling.

Step 12

Allow the casserole to cool for 5 minutes before slicing and serving. Enjoy!
