  • 1 cup green or brown lentils, rinsed and drained
  • 8 cups vegetable broth
  • 1 15-ounce can diced tomatoes (canned with liquid)
  • 1 piece bay leaf
  • 2 cups baby spinach (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 lemon lemon wedges (for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.
