  • 1 approximately 4-5 lbs whole chicken
  • 1 teaspoon dried culinary lavender
  • 2 tablespoons, chopped fresh lovage leaves

  • 2 tablespoons lime juice
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 4 cloves garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons, softened unsalted butter
  • 1 cup chicken stock

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the chicken dry with paper towels and place it on a roasting rack set inside a roasting pan.

In a small bowl, combine the softened butter, minced garlic, lime zest, chopped lovage leaves, and dried lavender.
