Ingredients

  • 2 tablespoons Dried culinary lavender
  • 2 tablespoons Dried chamomile flowers
  • 2.5 cups Water
  • 3 cups Granulated sugar
  • 3 tablespoons Liquid pectin
  • 2 tablespoons Fresh lemon juice
  • 1 drop Purple food coloring (optional)

Directions

Step 1

In a medium saucepan, bring the water to a gentle boil.

Step 2

Add the dried lavender and chamomile flowers to the boiling water. Remove the saucepan from heat, cover it, and steep the mixture for 15 minutes.

Step 3

Strain the infused liquid through a fine mesh sieve or cheesecloth into a large bowl to remove any flower solids. Discard the solids.

Step 4

Return the strained liquid to the saucepan. Add the granulated sugar and fresh lemon juice, stirring well to dissolve the sugar completely.

Step 5

Bring the mixture to a boil over medium-high heat. Stir occasionally to prevent scorching.

Step 6

Once boiling, stir in the liquid pectin. Allow the mixture to boil vigorously for 1 minute, then remove it from the heat.

Step 7

If desired, add a drop of purple food coloring for a vibrant hue. Stir well to ensure even coloring.

Step 8

Carefully ladle the hot jelly mixture into sterilized jars, leaving about 1/4 inch of headspace at the top.

Step 9

Seal the jars with sterilized lids and process them in a boiling water bath for 10 minutes if storing long-term, or allow the jars to cool and refrigerate for immediate use.

Step 10

Let the jelly set at room temperature for 24 hours before serving or gifting. Serve with toast, scones, or select cheeses.
