Ingredients

  • 2 cups Heavy cream
  • 1 tablespoon Dried culinary lavender
  • 1/3 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 5 Egg yolks
  • 1/8 teaspoon Salt
  • 3 tablespoons Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a medium saucepan, combine the heavy cream and dried lavender. Heat over medium heat until the cream begins to simmer, then remove from heat. Cover and let steep for 15 minutes to infuse the lavender flavor.

Step 3

In a medium bowl, whisk together the granulated sugar, vanilla extract, egg yolks, and salt until combined and slightly thickened.

Step 4

Strain the lavender-infused cream through a fine-mesh sieve into a clean bowl to remove the lavender pieces. Gradually whisk the warm cream into the egg yolk mixture, a little at a time, to temper the eggs and avoid curdling.

Step 5

Divide the custard mixture evenly among 4 ramekins. Place the ramekins in a large baking dish, ensuring they are evenly spaced.

Step 6

Carefully pour hot water into the baking dish, around the ramekins, until it reaches halfway up the sides of the ramekins. This water bath will help the custards bake evenly.

Step 7

Bake the custards in the preheated oven for 40-45 minutes, or until the centers are slightly jiggly but set along the edges.

Step 8

Remove the ramekins from the water bath and allow them to cool to room temperature. Then, transfer them to the refrigerator to chill for at least 2 hours, or overnight.

Step 9

Before serving, sprinkle 3/4 tablespoon of granulated sugar evenly over the top of each chilled custard. Use a kitchen torch to caramelize the sugar until it forms a crisp, golden-brown layer. If you don't have a torch, you can broil the custards in your oven at high heat for 1-2 minutes, watching carefully to prevent burning.

Step 10

Let the caramelized sugar cool for about 1 minute before serving. Enjoy your Lavender Creme Brulee with its creamy custard center and delightful crunch on top!
