Ingredients

  • 1 teaspoon dried culinary lavender
  • 2 tablespoons honey
  • 3 tablespoons white wine vinegar
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon water

Directions

Step 1

Place the dried lavender in a mortar and pestle, and gently grind until the lavender is broken into smaller pieces to release its fragrance. If you don’t have a mortar and pestle, you can use the back of a spoon in a small bowl.

Step 2

In a small bowl or a mason jar, combine the ground lavender, honey, and white wine vinegar. Stir or shake until the honey is fully dissolved into the vinegar.

Step 3

Add the Dijon mustard, salt, and black pepper to the mixture. Whisk or shake until well combined.

Step 4

Slowly drizzle in the olive oil while continuing to whisk, or add the olive oil to the mason jar, seal the lid, and shake vigorously until the dressing is emulsified.

Step 5

Thin the dressing to your desired consistency by stirring in the water, one teaspoon at a time, if needed.

Step 6

Taste the dressing and adjust seasoning or sweetness to your preference by adding more honey, vinegar, salt, or pepper as desired.

Step 7

Transfer the dressing to a serving container or store in the refrigerator for up to one week. Shake well before each use.
