Trim excess fat from the pork shoulder and pat it dry with paper towels.
Heat olive oil in a large Dutch oven or heavy skillet over medium-high heat.
Sear the pork shoulder on all sides until it is golden brown, about 2-3 minutes per side. Transfer the pork to a slow cooker.
In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until translucent and fragrant, then remove from heat.
