Ingredients

  • 1 cup oat bran
  • 0.5 cup whole wheat flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1.25 cups milk (dairy or non-dairy)
  • 1 large egg
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter or oil
  • 0 non-stick cooking spray or additional butter

Directions

Step 1

In a large mixing bowl, combine the oat bran, whole wheat flour, baking powder, cinnamon, and salt. Stir until well mixed.

Step 2

In another bowl, whisk together the milk, egg, honey, vanilla extract, and melted butter or oil until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients while stirring. Mix until just combined. Be careful not to overmix, as this can make the pancakes dense.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with non-stick cooking spray or a small amount of butter.

Step 5

Using a 1/4 cup measuring cup, scoop the batter onto the skillet, forming small pancakes. Cook for 2-3 minutes, or until bubbles start to form on the surface and the edges look set.

Step 6

Flip the pancakes carefully and cook for another 2-3 minutes, or until golden brown and cooked through.

Step 7

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 8

Serve the pancakes warm with your favorite toppings, such as fresh fruit, yogurt, maple syrup, or nut butter.
