Ingredients

  • 4 cups Water
  • 4 pieces Black tea bags
  • 1 inch Fresh ginger
  • 1 piece Cinnamon stick
  • 6 pieces Green cardamom pods
  • 5 pieces Cloves
  • 5 pieces Black peppercorns
  • 1 piece Star anise
  • 0.25 teaspoons Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Granulated sugar (or sweetener of choice)

Directions

Step 1

Peel and slice the ginger into thin coins to release its flavor.

Step 2

In a medium saucepan, bring the 4 cups of water to a boil.

Step 3

Once boiling, reduce the heat to medium and add the cinnamon stick, cardamom pods (lightly crushed), cloves, black peppercorns, and star anise.

Step 4

Allow the spices to simmer for 5 minutes, stirring occasionally.

Step 5

Add the sliced ginger and ground nutmeg to the saucepan. Simmer for an additional 3-5 minutes until fragrant.

Step 6

Reduce the heat to low, then add the black tea bags. Steep for 4-5 minutes, or longer for a stronger flavor.

Step 7

Remove the saucepan from heat and stir in the vanilla extract and sugar until dissolved. Adjust the sweetness to your preference.

Step 8

Strain the concentrate through a fine-mesh sieve to remove the spices and tea bags. Let it cool to room temperature.

Step 9

Transfer the concentrate to a clean, airtight jar or bottle and refrigerate. It can be stored for up to 7 days.

Step 10

To serve, mix equal parts chai concentrate and milk (or a dairy-free alternative). Heat gently in a saucepan or microwave, or pour over ice for an iced chai latte.
