Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 medium russet potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 2 leaves bay leaves
  • 1 teaspoon fresh thyme
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for garnish)
  • 0.25 cup crumbled bacon (optional, for garnish)

Directions

Step 1

Melt the butter in a large pot over medium heat.

Step 2

Add the diced onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Step 4

Add the diced potatoes, broth, bay leaves, and thyme. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.

Step 6

Remove the bay leaves and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree, then return it to the pot.

Step 7

Stir in the heavy cream, salt, and black pepper. Adjust seasoning as needed.

Step 8

Simmer the soup on low for another 5 minutes to let the flavors meld together.

Step 9

Serve hot, garnished with fresh parsley, shredded cheddar cheese, and crumbled bacon if desired.
