Ingredients

  • 4 medium-sized (peeled, pitted, and diced) Ripe mangoes
  • 0.75 cup White sugar
  • 0.5 cup Apple cider vinegar
  • 1 medium-sized (finely chopped) Sweet onion
  • 1 tablespoon (freshly grated) Ginger
  • 2 minced Garlic cloves
  • 2 whole Bay leaves
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon (optional for heat) Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 cup Water

Directions

Step 1

1. Prepare the mangoes by peeling, pitting, and dicing them into small cubes. Set aside.

Step 2

2. In a medium-sized pot, combine the sugar, apple cider vinegar, and water. Stir the mixture over medium heat until the sugar dissolves completely.

Step 3

3. Add the chopped onions, grated ginger, minced garlic, bay leaves, ground cumin, ground cinnamon, red pepper flakes (if using), and salt to the pot. Stir well to combine.

Step 4

4. Let the mixture come to a gentle simmer, then add the diced mangoes to the pot. Stir well to coat the mangoes with the spiced mixture.

Step 5

5. Reduce the heat to low and simmer the chutney uncovered for about 25-30 minutes, stirring occasionally to prevent sticking. The mangoes should soften and the chutney will thicken as it cooks.

Step 6

6. Taste the chutney and adjust the seasoning with additional sugar, salt, or vinegar, if needed.

Step 7

7. Once the chutney has reached your desired consistency (slightly thick but still spreadable), remove it from the heat and discard the bay leaves.

Step 8

8. Let the chutney cool to room temperature, then transfer it to sterilized jars for storage. Store in the refrigerator for up to 2 weeks.

Step 9

9. Serve as a condiment with your favorite dishes or enjoy it as part of a cheese platter!
