Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 1 pound ground beef (or ground turkey for a leaner version)
  • 28 ounces canned crushed tomatoes
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 2 tablespoons canned tomato paste
  • 1 cup beef broth (or chicken broth for a lighter option)
  • 2 teaspoons chipotle chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon sugar (optional, to balance acidity)
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for serving)
  • 0.25 cup sour cream (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and red bell pepper to the pot. Sauté for 5 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the ground beef to the pot, using a wooden spoon to break it apart as it cooks. Cook until fully browned, about 7-8 minutes. Drain any excess grease, if necessary.

Step 5

Stir in the crushed tomatoes, black beans, kidney beans, tomato paste, and beef broth. Mix well.

Step 6

Add the chipotle chili powder, ground cumin, smoked paprika, oregano, salt, black pepper, and sugar (if using). Stir to combine all the flavors.

Step 7

Lower the heat to a simmer. Cover partially with a lid and let the chili cook for 25-30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning if needed, adding more salt or spices to your preference.

Step 9

Serve hot in bowls. Garnish with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream, if desired.
