Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, sliced into rounds
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 10 ounces egg noodles
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add diced onion, sliced carrots, celery, and a pinch of salt. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Add the minced garlic and cook for another minute until fragrant.

Step 5

Pour in the chicken broth and water, then add the thyme, rosemary, bay leaves, and the seared chicken breasts back into the pot.

Step 6

Bring the soup to a boil over high heat, then reduce the heat to low. Cover the pot and let it simmer for 25 minutes, or until the chicken is cooked through.

Step 7

Remove the chicken breasts from the pot and shred them into bite-sized pieces using two forks. Return the shredded chicken to the pot.

Step 8

Add the egg noodles to the soup and cook for 6-8 minutes, or until the noodles are tender. Stir occasionally to prevent the noodles from sticking.

Step 9

Season the soup with salt and pepper to taste.

Step 10

Serve hot, garnished with freshly chopped parsley if desired. Enjoy!
