Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.25 teaspoons salt
  • 4 large eggs
  • 0.75 cups lemon juice
  • 1 tablespoon lemon zest
  • 1.5 cups granulated sugar
  • 0.25 cups all-purpose flour
  • 2 tablespoons powdered sugar

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan with butter or non-stick spray.

Step 2

In a medium bowl, mix together 2 cups of all-purpose flour, 1/2 cup of granulated sugar, and 1/4 teaspoon of salt.

Step 3

Cut in the 1 cup of unsalted butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.

Press the mixture evenly into the prepared baking pan to form the shortbread crust.

Bake the crust in the preheated oven for 18-20 minutes, or until lightly golden. Remove from the oven and set aside.

While the crust is baking, prepare the lemon filling. In a large mixing bowl, whisk together 4 large eggs, 3/4 cup of freshly squeezed lemon juice, 1 tablespoon of lemon zest, 1 1/2 cups of granulated sugar, and 1/4 cup of all-purpose flour until smooth.
